Rhubarb Vodka / Rhubarb Gin

Rhubarb is certainly a giver. Once established it rewards almost no effort with stalk after stalk of pinky goodness. Not that I am ever going to admit of getting bored with Rhubarb Crumble, but it is always good to experiment with this wondrous plant, especially if alcohol is involved. So here is my recipe for Rhubarb Gin -

1 kg of pink rhubarb cut into 2cm pieces
400g of caster sugar
800 ml of gin (I am no connoisseur, Tesco's own label Gin seemed to work just fine for me)

1. Put rhubarb in large kilner jar with sugar, shake it all up and leave overnight
2. Add the gin, give it a good shake and then leave it for 4 weeks, shaking gently again whenever you can remember
3. Enjoy!

This also works pretty well as Rhubarb Vodka with the following twists -

2 pink rhubarb stalks cut into 2cm pieces
3 tablespoons of caster sugar
half a lemon
3 cloves
1 cinammon stick
1 litre of vodka (again Tesco's own label seemed to work just fine)

1. Mix everything up
2. Give it a good shake and leave for 4 weeks
3. Strain and then leave for another 4 weeks (if you can!)
4. Enjoy some more!
